Saturday May 25, I went fishing at Myilly point rocks.
The sea water was very clear at the outgoing tide but very murky at the incoming tide.
Using Yo-zuri Mag Crystal Minnow F85, I caught a 56cm barramundi and a small barramundi.

I took a 56cm barramundi home and released a small barramundi.
In addition, using Squidgy Pro Mongrel 90mm I caught and released a small barramundi.
I thought that barramundi is not suited for the sashimi with soy sauce and wasabi.
But this was the first timeI found out how to deliciously eat barramundi's sashimi with soy sauce and wasabi.

  1. Bleeding fish as soon as it's caught is important in preserving the quality of the fish meat.
  2. Ice the fish immediately.
  3. Sprinkle sea salt on fish fillets.
  4. Keep fish fillets in the fridge for one night.
  5. Cut with a very sharp knife into slices.
  6. Eat sashimi with chilled soy sauce and wasabi.


On the other hand, using Kewpie roasted sesame dressing, you can deliciously eat freshly caught barramundi in sashimi.


I'm very careful about freshness and hygiene with the raw fish.

56cm Barramundi #1193

Sahimi and NIgiri sushi

I went fishing at Deck chair cinema rocks on Monday of January 28.
Luckily, I caught a 56cm saltwater barramundi by land based on Rapala SXRM-10 using a spinning rod.




I took this fish to my place and cooked the fillets into sashimi (Tuesday) and nigiri-zushi (sushi) (Wednesday).


The sashimi of thinly sliced saltwater barramundi was eaten with Kewpie Roasted Sesame Japanese Dressing on Tuesday.
You can buy Kewpie from Woolworths or Coles.


I made the marinated barramundi Nigiri-zushi (sushi) for dinner on Wednesday.
1,Made the marinade sauce.
   Soysauce 3, Mirin 1.5 and Cooking sake 2. (bought from
   Orient Emporium)
2,Boiled the sauce on a stove to evaporate alcohol for 1 minute.
3,Cooled the marinade sauce before dipping.
4,Dipped those slices and little ginger in the marinade sauce.
5,Left it for 60 minutes in the fridge.
6,Dried those slices with paper towels.
7,Made it into Nigiri sushi style with wasabi.
8,Chopped chives, Squeezed lime.
9,Sushi rice: Short grain rice and sushi seasoning

Nigiri-zushi (sushi) is made through a process of combining vinegared rice with sliced of barramundi's fillets.
It is preferable to wet hands with the rice wine vinegar or sushi seasoning while you are making sushi rice into the nigiri-zushi (sushi) shape.

Saturday morning on December 16, I went fishing at Channel Island.
It was unusually calm day in December.
The sea surface was flat.
Fish wouldn't bite lures.
However, there was hope because the seawater was clean but not very clear.
I saw some splashing jelly prawns whose size were 50mm - 70mm.
I used Zerek Live Cherabin and Zerek Live Shrimp.
Fish wouldn't take them.
Next, I used Squidgy Pro Mongrel 90mm Aussie Herring having a long flying distance.
Without dragging on the bottom of water, I retrieved it slowly.
As a result, I caught a 58cm barramundi.

And I took this barramundi home.
Heated lard in a large sauce pan, and fried fish.



I ate 3 slices of barramundi's sashimi as an appetizer.

The best sashimi in Darwin

Today's tides were ideal for my land based barramundi fishing.

So I went to Fishing & Outdoor World to buy Squidies Fish Drop Bear 100mm and Jighead 1/4oz #5/0 and repair my fishing rod on Sunday morning.
I didn't go fishing in the day time.
I met Toshimitsu at the car parking in the East Point at 8:15pm.
The incoming tide started moving around 9:00pm at the East Point.
There was no moonlight.
The sound of approaching footsteps wading through the shallow water roused us.
We moved to another rocks just in case.
The water was very clear and still cold.
I said to Toshimitsu, "Just to warn you in advance, today's situation is very good and so I won't use lure-clip and will concentrate on using a Squidgies Fish Drop-Bear 100mm."
The result was as I expected.
I  caught a 64cm dry season's solid saltwater barramundi.

It might seem hard to believe.
From the middle of August to the beginning of October, it's the quietest season for the land based barramundi fishing in my fishing locations every year without an exception.
Some people believe that barramundi will be taking lures from the middle of August because the water temperature is getting warmer.

That's an information regarding the land based fishing in my fishing locations.

You still can fish many Spanish-mackerel in a blue water.
You still can fish some nice sized Thredfin-salmon  and really big catfish in an estuary of the big river.
If you have a boat, you will be able to catch many fish from the middle of August to the beginning of October.




By the way, the dry season's saltwater barramundi is the best sashimi fish in Darwin.




You can eat very fresh barramundi's raw slices with these following dressings.




The fresh raw slices should be preserved freshly and hygienically and eaten within 2 days after you caught the barramundi.
Very yummy!
It is not recommended to be eaten with soy sauce and wasabi.
This dressing should be the best for barramundi sashimi.

The sea barramundi is a very clean fish to be eaten in raw.

Most barramundi meat is easily eatable as sashimi.

I have been eating saltwater barramundi's sashimi for many years.
I have never once had a stomachache with that as a cause.
It is comparatively easy to keep the degree of freshness of saltwater barramundi.

Sashimi is eaten often with soy sauce mixed with wasabi (paste of green Japanese horseradish).
But I don't want you to eat saltwater barramundi's sashimi with soy sauce mixed with wasabi.
It's not quite delicious.

I caught a 61cm saltwater barramundi at East Point and filleted into six piece on Sunday.




I kept those fillets hygienically in the fridge overnight.
That would be more delicious.
I used a sanitary chopping board, made sashimi and ate it on Monday.

How to prepare saltwater barramundi: Sashimi, whatever I say sashimi is the tastiest on certain conditions.
I will surely use "PIETRO Original taste (Soy sauce) dressing" or "KEWPIE Roasted sesame dressing".
You shouldn't use other dressings at the current point in time please.
Again, don't use soy sauce mixed with wasabi for barramundi please.




Soaking polished sliced onion in water and then draining off water goes well saltwater barramundi's sashimi.




By the way, I love fish and chips of the saltwater barramundi very much also.

Special sashimi cuisine "Kobu-jime"


I caught a 42cm flathead on Yo-zuri SS-minnow on March 28.
Normally, Darwin's flathead is not very rich taste to compare with flathead in the coldwater.
So I made a very special sashimi cuisine with a tastily eatable method.

Sprinkle sea-salt on fish




Dried Kobu (Konbu) is a type off seaweed called kelp.




Wipe kobu with vinegar and put some sliced gingers on kobu



Place fish on kobu






Fish are sandwiched between pieces of kobu for few hours to transfer its flavor to the fish, which is called kobujime.




Kobujime is normally eaten at the high-class Japanese restaurant.

How to make sashimi?

I decided to get out of the Buffalo Creek around 9:30am.
I was hesitating about going to the Lee Point Beach while driving my 8 years old 50 cc scooter because I only had 30 minutes to fish there.
After all, I went to the Lee Point Beach to fish.

I waded through the shallow water near the rocks.

The sea water was murky but I could see in the water.
I cast my lure at a depth of 70 cm, took the greatest precautions against crocodile, shark and stonefish.
I had a short striking and so loosened the drag pressure as much as possible.

I wanted to have some delicious sashimi for the first time in a while.






The sea barramundi is a very clean fish to eat in raw.
I bleed the fish thoroughly and quickly when I catch a keeper-size sea barramundi that I intend to eat.
I take it home as soon as possible, hanging it by my left hand using a lip grip while riding on my scooter.

I did like that again.
Many people took the pictures of me and fish while I was driving my 8 years old 50 cc scooter.

These sashimi slices can be preserved for one day in the fridge.




PIETRO DRESSING is made in Japan.
There are many tastes of dressing in PIETRO.
I recommend you the above one with an orange cap.  (Original taste)
This deliciousness is incomparable!
