Parasites in fish are a natural occurrence and common.
Raw fish should be frozen to an internal temperature of −20°C (−4°F) for at least 7 days to kill parasites.
It is important to be aware that home freezers may not be cold enough to kill parasites.
Traditionally, fish that live all or part of their lives in fresh water were considered unsuitable for sashimi due to the possibility of parasites.
I have been eating sashimi in Darwin since 1989.
Luckily, I have never gotten food poisonings caused by anisaks and ciguatera.
Of course, I have never eaten sashimi of any fresh water fish in Darwin.
I don't recommend to eat sashimi of fish caught in very warm waters very much.
We must be alert to the dangers of food poisoning.
Basically, lean flesh of fish found in warm waters shouldn't suitable for sashimi.

It effect is not so much as the best taste of sashimi but you can enjoy sashimi in the dry season.
It's not bad.
Normally, sashimi is eaten with soy sauce seasoned with wasabi and vinegared miso.
Lean flesh of fish found in warm waters has less good taste component therefore it should be suitable for marinating.
Originally, it was eaten after being marinated in soy sauce, miso in order to preserve the foods as well as to kill harmful bacteria.
Raw fish marinated in these following sauce can be kept fresh and tasty for more two days when refrigerated.
- Soy sauce: spoon 1 and mirin: spoon 1 (sweet cooking sake-wine)
- It will take 4 hours to be marinated at least.
You can buy mirin from Woolworth, Coles and Asian foods shops.

Ginger, garlic, chili, sesame and sesame oil are used depending on the taste.
Barramundi, Long-tail tuna, Spanish mackere, Blue salmon, Golden snapper, Mangrovejack, Whiting and Brassy trevally are very suitable for marinating with soy sauce and mirin in Darwin..
I recommend to eat with vinegared rice for sushi.
These are really delicious!
Queenfish should be recommended to be eaten with vinegared sweet miso.
Sliced barramundi flesh marinated in soy sauce, mirin and ginger for 6hours in the fridge.
Put the vinegared rice on a nori, and put sliced marinated barramundi on the rice, and finally fold the nori.
You may sprinkle lime juice or put some wasabi paste if you like.

Ahi Poke sauce (Hawaiian)
- 1 cup soy sauce
- 3/4 cup chopped green onions
- 2 tablespoons sesame oil
- 1 tablespoon toasted sesame seeds
- 1 tablespoon crushed red pepper
- 2 tablespoon finely chopped Macadamia nuts
